Interesting milk facts: A closer look at one of the world’s most favourite beverages

Milk has been a beloved part of many people’s diets around the world for centuries, providing essential nutrients and comforting flavours. Here are some interesting milk facts that you might not know about!

 Milk: what is it?

Milk is a nutrient-rich liquid produced by the mammary glands of mammals, including humans. It is a key food source, consumed fresh or processed into products like butter and cheese.

In Western countries, cow's milk is most common, while sheep and goat milk are important in southern Europe and the Mediterranean. Water buffalo milk is prevalent in Asia, and camel milk is significant in the Middle East and North Africa.

Does milk count as fluid?

Water is the prime fluid choice for staying hydrated, but milk follows closely since about 87% of whole cow's milk is water. The remaining 13% is made up of protein, fat, carbohydrates, vitamins, and minerals.

To produce lower fat options, fat is removed through processing: "reduced fat" milk contains 2% milkfat, "low fat" milk contains 1% milkfat, and "non fat" or "skim" milk has almost no milkfat.

Why is milk white?

Milk appears white due to the reflection of light off the fat droplets and protein particles suspended in it.
The main protein, casein, along with tiny fat globules, scatter light, giving milk its characteristic white colour.

Is milk beneficial for your health?

Milk is rich in nutrients like calcium, vitamin D, vitamin A, and B vitamins, with a relatively low caloric content. It supports bone health, muscle function, and overall well-being, making it suitable for all stages of life. It can be consumed by people of all ages due to the presence in the human intestine of lactase, an enzyme necessary for the digestion of lactose. This makes it an appropriate food for children, adults and the elderly, except for those who are lactose intolerant due to documented lactase deficiency.

Yogurt, on the other hand, is well tolerated by most intolerants and can be a viable alternative for those who require a lactose-reduced diet. Overall, regular consumption of milk and yogurt helps to ensure adequate calcium and phosphorus intake, helping to reduce the risk of osteoporosis.

How much milk should you consume per day?

Health guidelines, such as those provided by the Italian Ministry of Health, recommend consuming three servings of milk or yogurt daily, with each serving being approximately 125 grams. This helps ensure adequate intake of essential nutrients like calcium and vitamins. In general, choosing milk and dairy products with no added sugar and low fat content promotes optimal nutritional intake.

What are the most common milk products?

Milk is the basis for a wide array of dairy products, including cheese, yogurt, butter, and ricotta.

Cheese is a key component of Mediterranean and Italian cuisine, with numerous varieties produced through different methods of coagulation and fermentation. The process involves the curdling of milk using rennet or microbial enzymes, and sometimes mold is used to develop specific flavours and textures.

Yogurt is created through bacterial fermentation of milk, which helps maintain a healthy gut flora. It is widely consumed for its probiotic benefits and is often recommended for people with lactose intolerance as the fermentation process reduces lactose content.

Butter is made by churning cream, separating the fat from the buttermilk. It is used in a variety of culinary applications, from baking to sautéing, adding richness and flavour to dishes.

Ricotta is a unique dairy product made from the whey remaining after cheese production. It is low in fat and has a mild, slightly sweet taste, making it versatile for both savory and sweet recipes.

Milk has been consumed by humans for thousands of years, making it one of the world's most ancient foods. The habit of humans consuming milk from other mammals began with the domestication of animals during the Neolithic Revolution and the rise of agriculture.

Early evidence of dairy consumption has been found in archaeological sites in regions like Mesopotamia and Egypt (9000–7000 BC).
